Uses/history/comments: Scarlet hedgehog cactus (also known as strawberry cactus or pitahaya in some areas) provides a splash of color to the landscape in spring with its bright red flowers. Other closely related species have hot pink flowers that are equally stunning. The flower petals of the strawberry cactus and its close relatives are edible and can be plucked and added to salads, used as a garnish, or eaten raw on the trail. While they don’t add much in the way of flavor, they are mucilaginous and add an interesting texture.

RECIPE

Cactus Cooler

Obtain 3 scarlet hedgehog cactus fruits and thoroughly de-spine and rinse them. Blend (seeds and all) with 1 tbsp. lime juice, 2 tbsp. water, and 1 tsp. raw honey until smooth. Strain the resulting juice through a fine stainless-steel mesh and pour the strained juice into ice cube trays to freeze overnight. The next day, put the frozen cubes back into the blender and blend on high until smooth (if too chunky, add a bit of water). Add a splash of vodka if you are so inclined or drink on its own as a cold summertime refreshment.
